Ingredients

4 tbsp. canola oil, divided

2 c. panko breadcrumbs

1 1/2 tsp. chili powder

2/3 c. whole buttermilk

1 large egg

Kosher salt

Freshly ground black pepper

2/3 c. all-purpose flour

3 firm but ripe avocados, each cut into 6 wedges

Preparation:

  1. First, heat your oven to 400°F. Take a large rimmed baking sheet and brush it with 1 tablespoon of oil, and use the remaining three to coat one bowl. Once you’ve done that, toss breadcrumbs and chili powder in the bowl, and add salt and pepper. Take a separate bowl to whisk together buttermilk and egg, and another one for flour.
  2. Next, take avocado and season it with salt and pepper. Toss it in flour and then in buttermilk mixture one wedge at a time. After that, put it in breadcrumb mixture. Finally, place avocado on the baking sheet, making sure the rounded side is faced down.
  3. Bake for 28 to 23 minutes, i.e., until it gets golden brown.

Ingredients (Chipotle lime sauce):

2 finely chopped chipotles in adobo

2 tsp. lime zest

Kosher salt

black pepper

1 1/2 tbsp. lime juice

1/2 tsp. chili powder

Preparation:

Take mayonnaise, finely chopped chipotles in adobo, lime juice, lime zest, and chili powder and stir together, adding kosher salt and black pepper.
